This was literally one of the best things I’ve ever eaten. I practically inhaled it.
I chopped up one apple and two cocktail tomatoes and laid them over a very large bed of spinach.
For the shrimp, I thawed them in room temperature water. Them sautéed them with Goya all season, garlic pepper, lemon pepper, curry powder, cayenne pepper, a tiny bit of honey,and lime juice.
I topped it all with goat cheese crumbles and sprinkled with chia seeds.
And then I dug in…and was very happy. The constant mix of sweet and sour was splendid.
